Was it always your dream to become a chef?
Yes, my connection to food has been strong since childhood. Growing up in Mauritius, my family owned one of the most modern and largest pastry and bakery shops on the island at that time. My uncle, who was trained at Lenôtre back in the 80s, truly inspired me and passed on his passion for the craft. That early exposure to the art of pastry and bakery shaped my dream of becoming a chef.

Where is “home” for you?
I will say… Raised and born in Mauritius but made in France. Both places hold a big part of who I am. Mauritius for my roots, warmth, and flavours; France for its culture, art, and the refinement it brought to my technique.

Pros and cons of living as an expat?
The biggest advantage is growth, both personal and professional. You get to experience new cultures, travel the world, meet incredible people, make friends everywhere, and discover diverse food traditions and flavours that constantly inspire creativity. The downside? Sometimes you miss the familiar family, traditions, and that feeling of belonging only home can give.

Life motto?
Live by a code of love. Stay humble, stay hungry, both in life and in the kitchen.

Most challenging aspect of being a chef?
The long hours can be tough. Every day, you repeat the same gestures, the same routine, day in, day out, week after week, year after year. I even call it “practice,” not work. When you choose this profession, you must immerse yourself completely, no distractions, no Plan B. But that’s also what pushes you to grow and innovate every day.

Favourite food?
Don’t laugh… my Sunday best.. a warm French baguette with Comté cheese, all day long. I love it!

Any memorable kitchen disasters?
Plenty! Every mistake is a lesson, that’s how you grow in this industry.

Favourite dish to create?
For years now, I’ve loved working with Japanese ingredients and blending them with French cuisine. It’s a beautiful meeting point between two worlds and two philosophies.

In another life, I would be… Expat or local?
A citizen of this beautiful world.
